We had many positive comments about Barbara Oldfield’s Chili so here is the recipe to Barabara’s chili:

One Gallon of Barbara’s Chili

Ingredients

3 lbs. ground beef – 80-20(fat) – actually used “roll” of 3 lbs.

3 cans (14 or 15 oz.) diced tomatoes – no seasoning – NO store or generic brand*

2 cans (14 or 15 0z) black beans – NO store or generic brand*

4 packages of Chili-O seasoning

1/2 each  – large green & red pepper – diced small pieces

1/2 cup diced white onion or 1/2 diced smallish white onion

1 can (11oz) Green Giant “Southwestern” style corn (has green & red pepper & blk beans – no seasoning)

1-2 Tablespoons Italian Seasoning

Cooking Instructions

Brown beef with onions………

When beef cooked  – drain off fat

Add seasoning packages

Stir well

Add tomatoes with juice and stir

Add black beans – DRAINED – NO Bean juice – and stir

Add corn – very little if any juice -  don’t drain – stir

Add peppers and Italian seasoning

Stir well

Cover

Cook on low simmer for minimum of 2 hours – stirring ocassionally to avoid burning. Cooking longer will enhance flavor – no longer than 3-4 hrs.
